First you need to think about 2 things:
1. At which organization do i want to do my internship? The UN is huge and has many different organizations - so do you want to do it at ILO, UNDP, UNEP, FAO etc etc. Find a focus! Obviously the more your (academic) background meets the profile of the organization, the more chance you have...
2. In which country/region do I want to do my internship?
I would then start to contact country offices of the organizations - to find these just go to worldbank.org or undp.org (in case of UNDP for example) and then click through to the country office website. Most country sites mention their internship and job vacancies - internships are usually open applications. Make sure your applications are really tailored to the country, their work etc etc. Trust me: copy-paste applications get thrown away immediately. An added plus would be if you already know someone within that country office and get referred!
